Shrimp and Scallop Scampi
Ingredients:
1/2 lb shrimp
desired amount of scallops
1 teaspoon coconut oil
2 tbs minced garlic
2 tbs of any flavor Mrs. Dash seasoning (they are salt free and perfect for any recipe!)
1/2 lemon squeezed
1/4 cup white wine
Instruction:
Cook shrimp in pan with half the coconut oil. Once shrimp is cooked add 1/2 the garlic.
Once shrimp is evening coated with oil garlic mixture remove and place to the side
Add the rest of your coconut oil and garlic to pan.
Add scallops
Place shrimp back in pan
Add Mrs. Dash, lemon juice, and wine
Cook for 3 min. on high. Make sure everything is evenly coated.
For your sides you can do what ever. Steamed veggies, asparagus, brown rice, or even just add this to a spinach leaf salad. (The garlic oil from the shrimp could be used as the dressing, just a thought).
